Polymerizing Characters of Glycosylated Lysozyme Monomer

Abstract
Polymerizing characters of glycosylated lysozyme monomer (GLM) were investigated to elucidate the cross-linking mechanism of the protein due to the Maillard reaction. Through the additional storage of the GLM isolated from the lysozyme stored with glucose for 6 hrs, polymer of the GLM were observed, but additional impairment of its amino acid residues were not. The amount of polymer were increased as additional storage time. Major carbonyl intermediate responsible for the polymerization of the GLM was assumed to 3-deoxyglucosone. Intermolecular cross-linking between the GLM and BSA was observed in the GLM stored with BSA. Polymerization of the GLM due to the additional storage were retarded in case of the GLM stored with N^(¥á)-acetyl-lysine or N^(¥á)-acetyl-arginine.
